Case Study
Ground pork with a lean-to-fat ratio of 70:30 was combined with 0%, 5%, and 10% Steamed Chickpea Flour. These blends were used to produce meatballs of similar size and baked. The figure below shows that with increased amounts of Steamed Chickpea Flour, a significant increase in percent yield was observed.

Results showed that an inclusion of 5% Steamed Chickpea Flour increased yield by almost 10%.   The inclusion of 10% Steamed Chickpea Flour resulted in a 12% yield increase compared to the control.

In addition to increasing yield, Steamed Chickpea Flour also prevents challenges that arise from excess liquid in meat systems.

Applications such as steamed dumplings, where moisture loss during cooking is trapped, present unique challenges.  Our trial formula, available upon request, shows Steamed Chickpea Flour in action, working to reduce moisture loss from the pork filling into the dumpling pocket. The result is a flavorful, plump and juicy dumpling with minimal mess.  An additional benefit is the prevention of moisture migration from the filling into the wrapper during freezer storage.

Steamed Chickpea Flour is a minimally-processed ingredient that can be used in many ways – other potential meat applications include meatballs, crumbles, and patties.
